Mexican Turnover
Make-up Procedure:
½ or ¾ puff rolled down to 4mm using EOI FLEX, PERFEX READY BITS or
PASTREX.
Cut out 12cm x 12cm square shapes, place filling in centre, egg wash edges, fold over as a
turnover, glaze again.
