Box Hill Institute of TAFE

Box Hill Institute is one of Victoria's leading providers of
Tertiary Education and Training. It annually equips more than 29,000 students with the
knowledge and skills to confidently face the challenges of the future.
Independent research from the Australian National Training Authority found up to 82% of
those graduating from Box Hill Institute gained employment, 53% of those in full-time
jobs.
Students come to the Institute for many reasons, some to upgrade skills, develop skills
for employment in the workforce, pursue areas of personal interest and in the case of
international students improve their English.
Bakers Delight had been experiencing difficulties with both the type of training presented
and the availability of suitable training times currently offered within the TAFE system.
In order to address these issues it sought to
set up its own facility and discussions were held with Box Hill Institute in 1997.
Box Hill Institute already had a relationship with Bakers Delight through its Practice
Office at the Whitehorse Campus, which is used to train students in business skills.
The new centre will be based at Box Hill Institute's Elgar Road Campus, 465 Elgar Road,
Box Hill. Funding for the centre has come from the Australian National Training Authority,
the State Government and Bakers Delight with the total cost being approx. $422,000.
The Centre will deliver nationally accredited apprenticeship and specific Bakers Delight
training to apprentices, trainees, Bakers Delight Franchisees and store employees. Other
planned uses for the centre include short courses and breadmaking for schools.
The first group of 16 apprentices started their training on Tuesday, October 17, 2000.
They will complete Certificate III in Breadmaking.
Apart from training as a baker, Bakers Delight offers apprentices the opportunity to go on
to become bakery managers, franchisees or bakery lessees. Career paths are also offered
into corporate head office.
BRI
BRI delivers a series of popular baking courses at its facility in Sydney. These
technical courses combine theory and practical components to enhance the participant's
learning outcomes.
Our course schedule for 2001 is now available and appears in the accompanying
advertisement.
BRI also designs and delivers tailored training for individual companies. This training
targets the specific skill requirements of the client. Companies often seek this training
where they are seeking to develop consistency between production sites or shops as well as
raising their overall product quality.

Training can be delivered as short courses on site, or at BRI's Bakery Training
facil ity or through distance education modules.

Swinburne Institute of TAFE
Swinburne TAFE's Hospitality and Tourism Department
is a leading provider of hospitality and tourism courses in the Eastern suburbs of
Melbourne. We deliver training in cookery, food and beverage, and tourism on three
campuses within the University, at Lilydale, Prahran and Croydon campuses. We are also
involved in workplace training for Food Processing in various enterprises in the Yarra
Valley region.
We deliver a broad range of courses from Certificate 2 Hospitality (Operations) to Dual
Award courses with the Higher Education division of Swinburne University of Technology.
Our courses are taught by professionally qualified staff who maintain strong links with
the industry. This year has seen a large increase in traineeships , which are a key area
for the Department. We shall continue to develop this
sector of the industry. Our facilities are excellent and offer students the latest in
technology and equipment. We conduct practical food and beverage and kitchen classes in
our three training restaurants: Mitchell's View (Lilydale), Bistro E (Prahran) and
Yarralang (Bayswater).
We have an enviable success rate with students moving into employment after their studies.
Many of our students have progressed to senior positions within large hotels such as the
Stamford Plaza and the Regent Plaza Ballroom. Opportunities for part-time work during
hospitality studies are always available and we encourage our students to work in the
industry while they are studying.

Crop & Food Research
Customised training and short-term baking courses may help companies cope with the
desperate shortage of skilled bakery staff, according to a Crop & Food Research baking
educator.
Training existing staff will help secure a highly skilled workforce, says Virginia
Humphrey-Taylor, education and training manager at Crop & Food Research, an
NZQA-registered training provider.
While running the well-established baking distance learning courses leading to the NZQA
National Certificate in Baking qualification, the institute is finding growing interest in
their shorter courses customised to a company's particular training needs.
These have included a `hands on' mechanical dough development course at a plant bakery,
craft baking workshops and practical courses for apprentices as well as their
comprehensive Distance learning courses..
Ms Humphrey Taylor says the institute's trainers and writers can align a company's
existing training material with the NZQA unit standards or they can work in-house to
produce company-specific training material from scratch. Being under the NZQA framework
means staff can work towards a recognised qualification.
Full training packages may include core basic skills such as safety and health, numeracy
and communications. Crop & Food Research staff can work with a company's own trainers
to set up and run courses. These can be done anywhere in Australasia, either in-house or
off-site.
HACCP and health and safety training is carried out too and can be added to packages. Also
proving popular this year has been several two-day workshops on craft skills such as
yeasted pastries and sourdoughs.
In addition to their longstanding bakery training work, the institute also runs training
programmes in
produce handling and seafood processing. Pre-employment courses are another option for
those wanting to study at home.
Ms Humphrey Taylor says companies are wanting training solutions tailored to their
specific needs. "We are happy to think outside the square, put the ideas together for
them and write or run their programme."

TAFE Tasmania
The Food Technology division of TAFE Tasmania delivers all
training under the framework of the National Food Processing Packages. As well as the
training packages for industry areas like Plant Baking, Pastry and Confectionery, the soon
to be released Retail Baking offers streams like Retail Baking Bread, Retail Baking Cakes
and Pastries and Retail Baking Combined.
A recent shift in the focus of training, via New Apprenticeships, has given employers more
power over the training provided to their staff. Employers can choose a stream of training
and decide to what level to train, e.g. Certificate 1, 2 or 3. The employer can then
tailor training by selecting the optional and specialist subjects and units, for their New
Apprentice, which are most appropriate for their workplace. Training can be conducted on
the job, with a qualified workplace assessor visiting to assess the apprentice. Depending
on the ability of the workplace to provide training, new apprentices can also participate
in training blocks at the Drysdale campus.
The Food Technology team at TAFE Tasmania can tailor training to the particular needs of
the individual and the employer. For example:
Certificate 1 pre-employment Baking is offered at the Drysdale campus. It gives
practical skills in Bread, Cake and Pastry making
for those interested in getting a foot in the door of the baking industry.
Units of training can be delivered to enterprises that require individual or whole
of staff training. This can be conducted in the workplace, or at Drysdale campus.
TAFE Tasmania enters partnerships with other training organisations to provide
training on their behalf.
The Food Technology staff at TAFE Tasmania will work with you to determine what
works best for you, and for your apprentice, and deliver a training package that suits
your workplace, your work hours and your work culture.
All training conducted by the Food Technology team at TAFE Tasmania is designed to match
the goals of the enterprise and assist the apprentice/trainee in attaining trade
competency.
Recently the Board of the Australian National Training Authority named TAFE Tasmania as
the Australian Training Provider of the Year. They received it for their work in
implementing national training packages, their quality training and for their relationship
with the Tasmanian community and industry.

Goulburn Ovens TAFE
Goulburn Ovens Institute of TAFE (GO TAFE) in Shepparton provides
training in the areas of baking and hospitality for students throughout Victoria and
Southern New South Wales. An extensive range of certificates are on offer. These can be
used as a pathway to further study or to gain employment within the tourism, hospitality
and baking industries. Specialised courses help students to advance their career within
the industry they are working in.
GO TAFE Program Manager, Kim Banfield speaks from personal experience when he says that
there are many interesting and diverse career options in the hospitality and baking
industries.
"I completed my apprenticeship as a pastry/sweets cook and went on to work for a five
star hotel in Melbourne. After that I spent six years working at the Goulburn Valley Base
Hospital and am now involved with training, which is an opportunity that never occurred to
me until fairly recently,"

patisserie outlets, or whatever they may choose. The opportunities are endless."
In recognition of their innovative approach to training, GO TAFE recently won a national
training award for their outstanding contribution to tourism and hospitality training in
Australia.
"Our training has a strong focus upon performance in the workplace," says Mr
Banfield.
"It is skills focussed and our host employers have had considerable input into the
training plans to ensure that it is effective not only in the classroom, but also in the
workplace."
